HOMEMADE COCONUT MAPLE GRANOLA
Granola is one of the easiest things to customize depending on what you family loves. When commercially made it can have a ton of fat and sugar so here is my rule of thumb in mind: keep the base rolled oats and add some dried fruit, some kind of nut, a little something sweet and a baking spice like cinnamon and presto you have granola in under 30 minutes.
Ingredients
3 cups old fashioned rolled oats (750 ml)
1/4 cup coconut oil (50 ml), melted
1/3 cup maple syrup (80 ml)
1 tsp. pure vanilla (5 ml)
1/2 cup raw pumpkin seeds (125 ml)
1/4 cup chopped dates (50 ml)
1/2 tsp. ground cinnamon (2.5 ml)
1/2 cup shredded unsweetened coconut flakes (125 ml)
Instructions
Preheat oven to 300°
In a large bowl, combine all ingredients, except coconut flakes, until well blended and spread onto a parchment lined baking sheet. Bake at 300° for 20 minutes, until golden. Add the coconut flakes and return to oven for another 8 - 10 minutes until coconut is golden.
